Mexican chicken recipe : Popular North American recipe

As the North America is suffering with a newer disease Swine flu and people are scared of having pork, the dish which came out to be most popular now a days is Mexican chicken dish.

The recipe is simple, nutritious with least amount of spices used. Mexican dishes are usually prepared in loive oil which is supposed to be best oil containing unsaturated fatty acids and some anti oxidant property which is supposed to be healthy.

Here is the ingredients required and method of preparation of Mexican chicken recipe.

Ingredients for Mexican chicken recipe

Boneless chicken 500 gm
2 small onion
2 tomato
2 green pepper
2 tsp of minced garlic
1/2 tsp of chilli powder
salt and pepper for taste, and
Olive oil for frying

Method for preparing Mexican chicken recipe

Tomato, onion and green pepper are chooped separately and in a frying pan (non stick preferred) coat it with enough olive oil. Heat the oil and fry onion and garlic till the onion becomes translucent. Keep them aside.

Then fry chicken separately in olive oil until it becomes tender. Add green pepper and tomato and stir. Then add cooked onion and garlic and stir. While stirring add chilli powder and season the dish with salt and pepper.

There should be sufficient olive oil while cooking and it may be added even after few hours if one want to have after few hours from refrigerator.

Mexican dishes when served in a taco shell add attraction, flavor and make it more delicious.
