Gul-e-firdaus - Recipe of sweet and desserts

Gul -e-firdaus is a Hyderabadi sweet dish and can be prepared as follows:

Ingredients for Gul-e-firdaus

500gms of grated dudhiya also called kaddoo or bottle gourd
50 gms of sabudana soaked and drained
125 gms of khoya or mava
150 gms sugar
1/2 tsp of elaichi powder
1 litre milk
A few drops of rose essence
A handful of badams
2 tsp pistas, blanched and sliced fine

Method to prepare Gul-e-firdaus

Heat 1/2 litre milk, add the grated dudhiya and cook till tender. Cook sabudana separately in the remaining milk, till it swells and become transparent. Then add khoya to the sabudana along with the sugar. Cook till sugar dissolves completely.

Add the grated dudhiya mixture, elaichi powder and rose essence. Ladle the mixture into clay bowls to serve. Clay bowls impart a special flavor to the dish. Serve cold.
