Cremino di Barbietole – Italian recipe
This is an Italian recipe famous region being Piedmont. The total preparation time is about 20 minutes and the ingredients mentioned below are to serve for 4 persons.
Ingredients for Cremino di Barbietole
1 Kg beetroot
200 gms strawberries or any berries if strawberry is not available.
2 tbsp olive oil
1 tbsp rosemary
1 tbsp parsley, chopped
Few drops of balsamic vinegar
Salt to taste
Pepper to season
Method to prepare Cremino di Barbietole
The oven should be pre heated to 200 degree centigrade. Peel beetroot, boil till tender for 20 minutes. Slice beetroot. Mix olive oil, balsamic vinegar, rosemary, salt and pepper in a mixing bowl. Add beetroot. Mix well till it is evenly coated. Arrange on a baking tray. Roast for about 20 minutes. Cool it. Blend beetroot with berries in a food processor. Add some water if needed to obtain a consistent cream. Adjust seasoning. Chill in a fridge.
Your Cremino di Barbietole is prepared, serve with a sprinkling of chopped parsley. Serve vhilled to 4 person.
