Prawn Aglio - A delicious seafood dish

Prawn Aglio is a famous dish of Hyan regency, Kolkata made under the guidance of chief sous chef. The recipe is one of the wonder of the Kolkata. The recipe ingredients mentioned below is to serve for 6 persons. The average time required to prepare Prawn Aglio is about 30 minutes.

Ingredients for Prawn Aglio

750 gm shrimps, de-vein but shells should be kept.
25 ml olive oil
4 cloves farlic which should be minced finely.
2 tbsp chopped parsley
20 ml lemon juice, which should approx juices of 2 lemons.
25 ml dry white vermouth
2 tbsp butter
Salt and pepper to taste
Parsley sprigs and lemon wedges for garnishing

Method to prepare Prawn Aglio

Take a large sout pan which can occupy whole shrimp, heat olive oil in it over high heat. Add garlic and stir quickly so that it should not burn. Then immediately add shrimp and stir constantly. Then add a generous pinch of salt and freshly ground of pepper. In about 3 minutes the shrimps turns pink, then add lemon juice. Stir thoroughly and constantly taking care that shrimps should not break. Take off flame.

Now place the heated platter or individual heated serving dishes. Now quicly pour vermouth into pan, still over high heat and let reduce by half. Then add a dash of butter, sprinkle black pepper and parsley. Pour them evenly over prepared shrimp and garnish with lemon wedges and parsley sprigs.

Now the prawn aglio is ready to serve. Serve hot to 6 persons.
