Insalata Cesare Alla Ela – Italian dish

Though this is an Italian dish but it is famous worldwide especially Europe. It is a kind of brunch which can be prepared in 15 minutes.

Ingredients for Insalata Cesare Alla Ela

The following are the ingredients required for serving 4 people. Croutons and salad are prepared separately.

For croutons
2 large garlic cloves
3 tbsp virgin olive oil
200 gm French baguette / bread slices cut into 1 and ½ inch cubes.

For salad
1 large egg
1 tsp of lemon juice
30 ml white wine vinegar
30 ml red wine
2 garlic cloves, crushed
1 tsp Dijon mustard
1 tsp Tabasco/Chinese chilly paste
1 tsp Workestershire sauce
50 ml extra-virgin olive oil
2 heads Romaine / regular lettuce
Plenty of Parsamen cheese, grated
Salt to taste
Pepper to season
Handful of fresh parsley, chopped

Method to prepare Insalata Cesare Alla Ela

The oven should be preheated to 200 degree centigrade / gas mark 6. Combine garlic, oil, salt and bread cubes in a bowl. Mix until cubes are coated evenly. Spread coated cubes onto a baking sheet. Bake until croutons are golden about 10 minutes. Alternatively toss cubes in a panon a high flame till it become crispy.

Mix Workestershire sauce, chilly sauce, wine, vinegar, lemon juice, garlic, salt, pepper and mustard in a bowl. Breeak in egg. Whisk dressing until smooth. Very slowly, add oil in a steady steam while constantly whisking dressing until smooth. Add some Parsemen cheese. Tear lttuce leaf into 1-2 inches pieces. Add them to a large bowl, if the bowl is wooden it is better. Add half the dressing. Toss the salad. Add the remaining dressing. Add all the Parsemen cheese and warm croutons. Toss again. Add handful of fresh parsley.

Your Insalata Cesare Alla Ela is prepared. Serve on chilled plates.
